Who couldn’t use another quick, easy side dish for your next dinner party or hosted event. This dish can be made with extra sweetener for a light dessert, but is great along any dish as a delicious complement.
There are so many ways to twist and turn this dish into something that’s right for your family, we happened to have carrots and apples fresh from the farm.
We used purple and yellow carrots along with golden delicious apples for this version, but store bought, farmers market acquired and/or anything else you can imagine will work. If we had more time, we probably would’ve roasted and chopped some walnuts to add. Any type of nut can be stirred in and/or added as garnish.
Ingredients:
- Carrots (enough for 4 cups of shredded carrots) approx. 6 large carrots
- Apples (enough for 2 cups of shredded apples) approx. 4 medium apples
- Mayonnaise (1/4 cup)
- 2% Milk (3 Tablespoons)
- Honey (3 Tablespoons)
Combine all the ingredients and stir will, adding liquids to the taste and consistency you wish for. We love the colorful completion of this carrot apple raisin salad recipe.
